Hazel's Chorizo Mini Pepper Bites
- 9 oz. Pork Chorizo
1/2 Cup Amazing Hazel's Gourmet Chili Sauce
- 1 1/2 Cups Cooked Rice
- 1/4 Cup Onion (chopped)
- 1 Cup Shredded Sharp Cheddar Cheese
- 10-15 Mini Multi-Colored Peppers (tops off, seeded, and halved)
- Garnish: Shredded Cotija Cheese, Chopped Jalapeno (seeded and deveined), and Cilantro
Place Pork Chorizo into skillet and brown on medium high heat until thoroughly cooked (about 10 minutes). Add onions, Amazing Hazel's,shredded cheddar cheese, and cooked rice. Reduce heat to medium low. Stir and continue to cook until juices are absorbed by the rice. Set aside, and allow to thicken and cool. Place peppers on baking sheet. Fill each pepper half with filling (approx 1-2 tsp). Place under broiler until nicely browned. Garnish with Cojita cheese, chopped jalapenos, and Cilantro to taste.
Note: Filling will yield approximately 2 cups. Fill desired number of mini-peppers. Pepper quantity will vary upon size of peppers.
